Prepare the Mousse
- In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and vanilla extract, continuing to whip until stiff peaks form.
- In another bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until glossy and stiff peaks form.
- Gently fold the whipped cream into the egg whites until fully combined.
Assemble and Chill
- Spoon the mousse mixture into serving cups and smooth the tops.
- Refrigerate for at least 1 hour to set.
Serve
- Top each mousse cup with a dollop of whipped cream, chocolate shavings, and a mint sprig before serving.
