Ingredients
  

Mousse Base
  • 1 cup heavy cream chilled
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 large egg whites room temperature
  • 1/4 teaspoon cream of tartar
Garnish
  • 1/4 cup whipped cream for topping
  • 1 tablespoon chocolate shavings optional
  • 1 sprig mint for garnish

Method
 

Prepare the Mousse
  1. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and vanilla extract, continuing to whip until stiff peaks form.
  2. In another bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until glossy and stiff peaks form.
  3. Gently fold the whipped cream into the egg whites until fully combined.
Assemble and Chill
  1. Spoon the mousse mixture into serving cups and smooth the tops.
  2. Refrigerate for at least 1 hour to set.
Serve
  1. Top each mousse cup with a dollop of whipped cream, chocolate shavings, and a mint sprig before serving.
