Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts sliced into thin strips
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch for thickening
  • 1 tbsp water to mix with cornstarch
Vegetables
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 1 inch ginger grated
Garnish
  • 2 tbsp sesame seeds toasted
  • 2 scallions sliced for garnish

Method
 

Marinate Chicken
  1. In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixed with water. Add chicken strips and marinate for at least 10 minutes.
Stir Fry
  1. Heat a wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add garlic, ginger, and vegetables to the wok. Stir fry for an additional 5-7 minutes until vegetables are tender-crisp.
  3. Pour any remaining marinade into the wok and cook for another 2 minutes until the sauce thickens.
Serve
  1. Serve hot, garnished with sesame seeds and sliced scallions.
