Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Taco Seasoning
  • 1 packet taco seasoning
Tomatoes
  • 1 can diced tomatoes with green chilies
Beans
  • 1 can black beans drained and rinsed
Corn
  • 1 can corn drained
Peppers
  • 1 cup bell peppers chopped
Onion
  • 1 medium onion chopped
Chicken Broth
  • 1 cup chicken broth
Toppings
  • shredded cheese for serving
  • sour cream for serving
  • cilantro for garnish

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Add the diced tomatoes, black beans, corn, bell peppers, onion, and chicken broth to the crockpot.
  4. Stir to combine all ingredients.
Cooking
  1. Cover and cook on low for 4-6 hours or until the chicken is cooked through and shreds easily.
  2. Once cooked, shred the chicken in the crockpot using two forks and stir to combine with the other ingredients.
Serving
  1. Serve the taco chicken in tortillas or over rice, topped with shredded cheese, sour cream, and cilantro.
