Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons ice water
Filling
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup heavy cream for whipping
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Cut in cold butter until mixture resembles coarse crumbs.
  2. Stir in egg yolk and enough ice water to form a dough. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Roll out the dough and fit it into a 9-inch pie dish. Prick the bottom with a fork and refrigerate for another 15 minutes.
  4. Preheat the oven to 350°F (175°C) and bake the crust for 20-25 minutes or until golden. Let it cool completely.
Prepare the Filling
  1. In a mixing bowl, beat cream cheese and granulated sugar until smooth.
  2. Add lemon juice and vanilla extract, mixing until well combined.
  3. In another bowl, whip heavy cream with powdered sugar until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Fold in sliced strawberries and pour the filling into the cooled crust. Smooth the top.
Chill and Serve
  1. Refrigerate the pie for at least 2 hours to set.
  2. Slice and serve chilled, garnished with additional fresh strawberries and whipped cream if desired.

Notes
