Method
Prepare the Crust
- In a mixing bowl, combine flour and sugar. Cut in cold butter until mixture resembles coarse crumbs.
- Stir in egg yolk and enough ice water to form a dough. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough and fit it into a 9-inch pie dish. Prick the bottom with a fork and refrigerate for another 15 minutes.
- Preheat the oven to 350°F (175°C) and bake the crust for 20-25 minutes or until golden. Let it cool completely.
Prepare the Filling
- In a mixing bowl, beat cream cheese and granulated sugar until smooth.
- Add lemon juice and vanilla extract, mixing until well combined.
- In another bowl, whip heavy cream with powdered sugar until stiff peaks form. Gently fold into the cream cheese mixture.
- Fold in sliced strawberries and pour the filling into the cooled crust. Smooth the top.
Chill and Serve
- Refrigerate the pie for at least 2 hours to set.
- Slice and serve chilled, garnished with additional fresh strawberries and whipped cream if desired.
