Ingredients
  

Chicken and Seasoning
  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Taco Toppings
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker.
  2. In a small bowl, mix together the chicken broth, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
Cook the Chicken
  1. Cover and cook on low for 6 hours or until the chicken is tender and easily shredded.
Shred and Serve
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker and mix it with the juices.
  3. Serve the chicken in corn tortillas and top with your favorite toppings.
