Ingredients
  

Beef
  • 2 pounds beef chuck roast trimmed of excess fat
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Liquid
  • 1 cup beef broth
  • 1 tablespoon lime juice freshly squeezed
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional
  • 8 pieces corn tortillas or flour tortillas

Method
 

Prepare the Beef
  1. Season the beef chuck roast with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Place the seasoned beef in the slow cooker.
Cook the Beef
  1. Pour the beef broth and lime juice over the beef in the slow cooker.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and shreds easily.
Shred the Beef
  1. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  2. Return the shredded beef to the slow cooker and mix it with the juices.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet over medium heat.
  2. Fill each tortilla with shredded beef and top with lettuce, tomatoes, cheese, sour cream, and jalapeños as desired.
