Prepare the Ingredients
- Slice the Italian sausage and dice all the vegetables.
Cook the Sausage
- In a large pot, cook the sausage over medium heat until browned.
Add Vegetables
- Add the carrots, celery, zucchini, and green beans to the pot. Cook for about 5 minutes.
Add Liquids and Seasonings
- Stir in the garlic, oregano, basil, chicken broth, and diced tomatoes. Bring to a boil.
Simmer the Soup
- Reduce heat and let the soup simmer for 20 minutes. Add spinach just before serving.
