Ingredients
  

Sausage
  • 1 lb Italian sausage sliced
Vegetables
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup zucchini diced
  • 1 cup green beans trimmed and cut
  • 1 cup spinach fresh
Liquids
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
Seasonings
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Ingredients
  1. Slice the Italian sausage and dice all the vegetables.
Cook the Sausage
  1. In a large pot, cook the sausage over medium heat until browned.
Add Vegetables
  1. Add the carrots, celery, zucchini, and green beans to the pot. Cook for about 5 minutes.
Add Liquids and Seasonings
  1. Stir in the garlic, oregano, basil, chicken broth, and diced tomatoes. Bring to a boil.
Simmer the Soup
  1. Reduce heat and let the soup simmer for 20 minutes. Add spinach just before serving.
