Potatoes
  • 2 pounds Yukon Gold Potatoes or any waxy variety
  • 3 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Garlic Powder optional
  • 1 teaspoon Dried Rosemary or any herb of choice

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes, then cut them into bite-sized pieces.
  3. In a mixing bowl, combine the potatoes, olive oil, salt, pepper, garlic powder, and rosemary. Toss until evenly coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  3. Remove from the oven and let cool slightly before serving.
