Ingredients
  

Roasted Peppers
  • 2 large red bell peppers roasted and sliced
  • 2 large yellow bell peppers roasted and sliced
Sandwich Components
  • 8 slices ciabatta bread or any crusty bread
  • 8 ounces fresh mozzarella cheese sliced
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze for drizzling
  • 2 tablespoons olive oil for brushing
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Peppers
  1. Preheat the oven to 400°F (200°C). Cut the bell peppers in half, remove seeds, and place them on a baking sheet.
  2. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 20 minutes until tender and slightly charred.
Assemble the Sandwich
  1. Slice the ciabatta bread in half and lightly toast if desired.
  2. Layer the roasted peppers, fresh mozzarella, and basil leaves on the bottom half of the bread.
  3. Drizzle with balsamic glaze and top with the other half of the bread.
Serve
  1. Cut the sandwich into halves or quarters and serve immediately.
