Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes or any waxy potatoes
Seasoning
  • 1 teaspoon salt for boiling
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked or sweet
Cooking
  • 4 tablespoons olive oil for frying
  • 2 tablespoons butter for flavor
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 cup shredded cheese optional, such as cheddar

Method
 

Prepare the Potatoes
  1. Wash and peel the Yukon Gold potatoes, then cut them into quarters.
  2. Place the potatoes in a pot, cover with water, and add salt. Bring to a boil and cook until tender, about 15-20 minutes.
Smash and Cook
  1. Drain the potatoes and return them to the pot. Use a masher to gently smash the potatoes, leaving some chunks.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the smashed potatoes to the skillet.
  3. Season with black pepper, garlic powder, and paprika. Cook for about 10-15 minutes, until the bottom is crispy and golden brown.
  4. Flip the potatoes and cook for an additional 5-10 minutes until the other side is also crispy.
Serve
  1. Remove from heat, sprinkle with fresh parsley and cheese if using. Serve hot.
