Ingredients
  

Chicken and Marinade
  • 1 pound chicken breast cut into bite-sized pieces
  • 2 tablespoons soy sauce for marinating
  • 1 tablespoon cornstarch for coating
Sauce
  • 1/2 cup pineapple juice fresh or canned
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup snap peas
  • 1 cup pineapple chunks fresh or canned
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds optional

Method
 

Marinate Chicken
  1. In a bowl, combine chicken pieces with soy sauce and cornstarch. Mix well and let marinate for 15 minutes.
Prepare Sauce
  1. In a separate bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, ginger, and garlic.
Cook Chicken
  1. Heat a skillet over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add bell pepper, snap peas, and pineapple chunks to the skillet. Stir-fry for another 5 minutes until vegetables are tender.
Combine with Sauce
  1. Pour the prepared sauce over the chicken and vegetables. Stir well and cook for an additional 3-5 minutes until the sauce thickens.
Serve
  1. Garnish with chopped green onions and sesame seeds before serving. Enjoy your Pineapple Chicken!
