Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Onion
  • 2 large onions sliced into rings
Oil
  • 4 cups vegetable oil for frying

Method
 

Prepare the Onions
  1. Peel the onions and slice them into 1/4 inch thick rings.
Make the Batter
  1. In a mixing bowl, whisk together flour, baking powder, garlic powder, paprika, salt, and black pepper.
  2. Gradually add buttermilk to the dry ingredients, mixing until smooth.
Heat the Oil
  1. In a deep fryer, heat vegetable oil to 375°F (190°C).
Coat the Onion Rings
  1. Dip each onion ring into the batter, allowing excess to drip off.
Fry the Onion Rings
  1. Carefully place the battered onion rings into the hot oil, frying in batches until golden brown, about 2-3 minutes per side.
  2. Remove with tongs and drain on paper towels.
Serve
  1. Serve hot with your favorite dipping sauce.

Notes

For extra crunch, you can double dip the onion rings by dipping them in the batter, then in flour before frying.
