Method
Prepare the Dough
- In a mixing bowl, combine flour, salt, sugar, and instant yeast. Mix well.
- Add warm water and olive oil to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Caramelize the Onions
- In a skillet, heat olive oil over medium heat. Add sliced onions and salt.
- Cook, stirring occasionally, for about 15-20 minutes until onions are golden brown and caramelized.
- Season with black pepper and thyme, if using. Remove from heat and set aside.
Cook the Flatbread
- Preheat a skillet over medium-high heat.
- Divide the dough into 4 equal pieces and roll each piece into a flat circle about 1/4 inch thick.
- Place the rolled dough in the skillet and cook for about 2-3 minutes on each side until golden brown.
- Top each flatbread with caramelized onions while still warm.
