Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 3/4 cup warm water about 110°F
  • 1 tablespoon olive oil
Topping
  • 2 medium onions sliced
  • 2 tablespoons olive oil for caramelizing
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon fresh thyme optional

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour, salt, sugar, and instant yeast. Mix well.
  2. Add warm water and olive oil to the dry ingredients. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Caramelize the Onions
  1. In a skillet, heat olive oil over medium heat. Add sliced onions and salt.
  2. Cook, stirring occasionally, for about 15-20 minutes until onions are golden brown and caramelized.
  3. Season with black pepper and thyme, if using. Remove from heat and set aside.
Cook the Flatbread
  1. Preheat a skillet over medium-high heat.
  2. Divide the dough into 4 equal pieces and roll each piece into a flat circle about 1/4 inch thick.
  3. Place the rolled dough in the skillet and cook for about 2-3 minutes on each side until golden brown.
  4. Top each flatbread with caramelized onions while still warm.
