Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 2 large egg yolks
  • 1/2 cup sweetened condensed milk
  • 1/4 cup fresh key lime juice
  • 1/2 teaspoon lime zest
Topping
  • 1 cup heavy whipping cream chilled
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a mini pie pan. Bake for 8-10 minutes until golden. Remove from oven and let cool.
Make the Filling
  1. In a bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  2. Pour the filling into the cooled crusts and bake for an additional 10 minutes. Remove from oven and let cool.
Prepare the Topping
  1. In a mixing bowl, beat the chilled heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Top each mini pie with a dollop of whipped cream before serving.
