Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 cup frozen peas and carrots
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 tablespoon olive oil

Method
 

Cooking Instructions
  1. In a rice cooker, heat olive oil and sauté the chopped onion and minced garlic until translucent.
  2. Add the rinsed rice and stir for a couple of minutes until slightly toasted.
  3. Stir in the diced tomato, frozen peas and carrots, ground cumin, chili powder, and salt.
  4. Pour in the vegetable broth and give it a gentle stir.
  5. Close the rice cooker lid and set it to cook according to the rice cooker's instructions.
  6. Once cooked, let it sit for 5 minutes before fluffing with a fork.
