Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 medium onion finely chopped
  • 1 medium tomato diced
  • 1 clove garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt adjust to taste
  • 1 tablespoon olive oil
  • 1/2 cup frozen peas optional
  • 1/2 cup corn optional

Method
 

Cooking the Rice
  1. In the rice cooker, heat the olive oil and sauté the chopped onion and minced garlic until translucent.
  2. Add the rinsed rice and toast for a few minutes, stirring frequently.
  3. Stir in the diced tomato, vegetable broth, cumin, chili powder, and salt.
  4. Close the lid and set the rice cooker to the 'white rice' setting.
  5. Once the rice is cooked, fluff with a fork and stir in the peas and corn if using.
  6. Let it sit for 5 minutes before serving.
