Method
Prepare the Filling
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for an additional 5 minutes.
Assemble the Lasagna
- Preheat the oven to 375°F (190°C).
- In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom.
- Layer 4 tortillas over the salsa, followed by half of the meat mixture and half of the cheese.
- Repeat the layers, finishing with a layer of tortillas topped with salsa and remaining cheese.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the lasagna cool for a few minutes before slicing. Garnish with fresh cilantro and serve warm.
