Mexican Lasagna with Tortillas

A delicious and hearty Mexican-inspired lasagna made with layers of tortillas, seasoned ground beef, beans, and cheese, topped with salsa and fresh cilantro.

Ingredients
  

Meat and Beans
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 packet taco seasoning
Tortillas and Cheese
  • 8 pieces corn tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
Sauce and Toppings
  • 1 cup salsa store-bought or homemade
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for an additional 5 minutes.
Assemble the Lasagna
  1. Preheat the oven to 375°F (190°C).
  2. In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom.
  3. Layer 4 tortillas over the salsa, followed by half of the meat mixture and half of the cheese.
  4. Repeat the layers, finishing with a layer of tortillas topped with salsa and remaining cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for a few minutes before slicing. Garnish with fresh cilantro and serve warm.

Notes
