Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe mango about 1 large mango
Optional Add-ins
  • 1/2 cup chocolate chips optional
  • 1/4 cup chopped nuts optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Stir in the mashed mango until fully incorporated.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips and nuts if using.
Baking
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
