Ingredients
  

Rice
  • 1 cup Basmati rice rinsed and drained
Spices
  • 1 teaspoon turmeric powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon cumin seeds
Vegetables
  • 1 cup peas fresh or frozen
  • 1 medium green chili slit
  • 1 medium onion finely chopped
  • 2 tablespoons coriander leaves chopped for garnish
Liquids
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cups water
Fats
  • 2 tablespoons oil vegetable or coconut oil

Method
 

Cooking the Rice
  1. In a pot, bring 2 cups of water to a boil. Add the rinsed basmati rice and a pinch of salt. Cover and simmer for 15 minutes or until the rice is cooked and water is absorbed.
Preparing the Lemon Rice
  1. In a pan, heat the oil over medium heat. Add mustard seeds, urad dal, and cumin seeds. Sauté until they start to crackle.
  2. Add the chopped onion and green chili. Sauté until the onion is translucent.
  3. Stir in the peas and turmeric powder, cooking for another 2-3 minutes.
  4. Add the cooked rice to the pan and mix well. Pour in the lemon juice and stir to combine.
  5. Garnish with chopped coriander leaves and serve warm.
