Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Vegetables
  • 2 cups broccoli florets steamed
  • 1 cup cherry tomatoes halved
  • 1 cup cooked quinoa
Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice about 1 lemon
  • 1 clove garlic minced
  • 1 tsp honey optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 lemon lemon wedges for serving

Method
 

Cook the Chicken
  1. Heat a skillet over medium heat and add olive oil. Once hot, add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
Prepare the Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, honey, salt, and pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooked quinoa, steamed broccoli, cherry tomatoes, and cooked chicken. Drizzle the dressing over the top and toss to combine.
Serve
  1. Divide the mixture into serving bowls. Garnish with chopped parsley and lemon wedges before serving.
