Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 3 large egg yolks
  • 1/2 cup fresh key lime juice
  • 1 can 14 oz sweetened condensed milk
Topping
  • 1 cup heavy whipping cream chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then remove and let cool.
Make the Filling
  1. In a mixing bowl, whisk together egg yolks and key lime juice until combined.
  2. Add the sweetened condensed milk and whisk until smooth. Pour the filling into the cooled crust.
Bake and Cool
  1. Bake the pie in the preheated oven for 10 minutes. Remove and let cool to room temperature, then refrigerate for at least 2 hours.
Prepare the Topping
  1. In a mixing bowl, beat the chilled heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread the whipped cream over the chilled pie before serving.

Notes
