Ingredients
  

Marinade
  • 4 pieces Chicken Breasts boneless and skinless
  • 1/4 cup Olive Oil extra virgin
  • 2 tablespoons Balsamic Vinegar
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
For Cooking
  • 1 cup Cherry Tomatoes halved
  • 1 cup Fresh Spinach washed
  • 1/4 cup Parmesan Cheese grated

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and pepper. Mix well.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium heat. Remove chicken from marinade and place in the skillet.
  2. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color.
  3. Add cherry tomatoes and spinach to the skillet during the last 5 minutes of cooking. Stir until the spinach wilts.
  4. Sprinkle grated Parmesan cheese over the chicken before serving.
