Ingredients
  

Rice and Broth
  • 1 cup long-grain rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
Herbs and Seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Cooking the Rice
  1. In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the rinsed rice, thyme, parsley, salt, and pepper. Cook for 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
  5. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
