Ingredients
  

Taco Filling
  • 1 lb lean ground turkey or chicken
  • 1 cup black beans cooked and drained
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning homemade or store-bought
Taco Assembly
  • 8 small corn tortillas or lettuce wraps
  • 1 cup lettuce shredded
  • 1 cup tomato diced
  • 1/2 cup avocado sliced
  • 1/4 cup cilantro chopped
  • 1/2 cup Greek yogurt as a sour cream substitute

Method
 

Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, sauté until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Add ground turkey and taco seasoning, cook until the meat is browned and cooked through.
  4. Stir in black beans and heat through.
Assemble the Tacos
  1. Warm the corn tortillas in a dry skillet for a few seconds on each side.
  2. Fill each tortilla with the turkey and bean mixture.
  3. Top with shredded lettuce, diced tomatoes, avocado slices, chopped cilantro, and a dollop of Greek yogurt.
  4. Serve immediately and enjoy!
