Ingredients
  

Taco Filling
  • 1 lb ground turkey lean
  • 1 tbsp olive oil for cooking
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 cup black beans cooked
  • 1 cup corn canned or frozen
  • 1 cup bell pepper diced
Taco Assembly
  • 8 small taco shells soft or hard
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for topping
  • 1 avocado sliced for topping

Method
 

Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Add ground turkey to the skillet and cook until browned, breaking it apart with a spatula.
  4. Stir in taco seasoning, black beans, corn, and bell pepper. Cook for 5-7 minutes until heated through.
Assemble the Tacos
  1. Warm taco shells according to package instructions.
  2. Fill each taco shell with the turkey mixture.
  3. Top with shredded lettuce, diced tomatoes, cheese, sour cream, and avocado slices.
  4. Serve immediately and enjoy!
