Marinate the Lamb
- In a mixing bowl, combine minced garlic, chopped rosemary, olive oil, salt, and black pepper.
- Add the lamb chops to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
Grill the Lamb Chops
- Preheat the grill to medium-high heat.
- Remove the lamb chops from the marinade and let them sit at room temperature for 15 minutes.
- Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach an internal temperature of 145°F (63°C).
- Remove from the grill and let rest for 5 minutes before serving.
