Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 cup red onion thinly sliced
Goat Cheese
  • 4 oz goat cheese crumbled
Vinaigrette
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Crumble the goat cheese over the top of the salad.
Make the Vinaigrette
  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Dress the Salad
  1. Drizzle the vinaigrette over the salad just before serving and toss gently to combine.
