Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
Filling
  • 1 cup heavy cream whipped
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
Topping
  • 1 cup mixed fresh fruits e.g., strawberries, kiwi, blueberries, and raspberries
  • 2 tablespoons apricot jam for glaze

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  3. Stir in the egg yolk and cold water until the dough forms.
  4. Press the dough into a tart pan and prick the bottom with a fork.
  5. Bake for 20-25 minutes or until golden brown. Let it cool.
Make the Filling
  1. In a bowl, beat the cream cheese until smooth.
  2. Add whipped cream, powdered sugar, and vanilla extract. Mix until well combined.
Assemble the Tart
  1. Spread the cream filling evenly over the cooled crust.
  2. Arrange the mixed fresh fruits on top of the filling.
  3. Heat apricot jam until melted and brush over the fruits for glaze.
  4. Refrigerate for at least 1 hour before serving.
