Ingredients
  

Eggplant
  • 2 medium eggplants sliced lengthwise
Filling
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon olive oil for dressing
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt
  • to taste pepper

Method
 

Prepare the Eggplant
  1. Preheat the grill to medium-high heat.
  2. Brush the eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant slices for about 5-7 minutes on each side until tender and grill marks appear.
Make the Filling
  1. In a mixing bowl, combine cherry tomatoes, cucumber, red onion, and parsley.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper. Mix well.
Assemble the Wraps
  1. Place a generous spoonful of the filling on each grilled eggplant slice.
  2. Roll the eggplant around the filling to create a wrap.
  3. Secure with a toothpick if necessary and serve immediately.
