Ingredients
  

Eggplant Filling
  • 2 medium eggplants peeled and diced
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Taco Assembly
  • 8 small corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup avocado sliced
  • 1/2 cup lime juice for serving

Method
 

Prepare the Eggplant
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine diced eggplant, olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread the eggplant mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden and tender.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.
  2. Fill each tortilla with the roasted eggplant mixture.
  3. Top with chopped cilantro, diced red onion, and sliced avocado.
  4. Drizzle with lime juice before serving.
