Ingredients
  

Vegetables
  • 1 large Eggplant sliced into 1/2 inch rounds
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1 cup Spinach fresh
Cheese
  • 1 cup Feta Cheese crumbled
Condiments
  • 2 tablespoons Olive Oil for grilling
  • 1 tablespoon Balsamic Vinegar for drizzling
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
Bread
  • 4 slices Whole Grain Bread or your choice of bread

Method
 

Prepare the Eggplant
  1. Preheat the grill to medium-high heat.
  2. Brush the eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant for about 5-7 minutes on each side, or until tender and grill marks appear.
Assemble the Sandwich
  1. On a slice of bread, layer the grilled eggplant, cherry tomatoes, cucumber, spinach, and crumbled feta cheese.
  2. Drizzle with balsamic vinegar and top with another slice of bread.
Serve
  1. Cut the sandwich in half and serve immediately.
