  • 2 cups corned beef, chopped
  • 3 cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 1 cup cheddar cheese, shredded plus extra for topping
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped corned beef, diced potatoes, chopped onion, shredded cheddar cheese, cream of mushroom soup, milk, black pepper, and garlic powder.
  3. Mix well until all ingredients are evenly coated.
Baking
  1. Transfer the mixture into a greased casserole dish.
  2. Sprinkle additional cheddar cheese on top.
  3. Cover with aluminum foil and bake in the preheated oven for 30 minutes.
  4. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
Serving
  1. Remove from the oven and let it cool for a few minutes before serving.
  2. Serve warm and enjoy your corned beef casserole!
