Ingredients
  

Marinade
  • 1 cup coconut milk
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon lime zest
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Chicken
  • 4 pieces chicken breasts boneless and skinless
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Marinate the Chicken
  1. In a mixing bowl, whisk together coconut milk, lime juice, lime zest, honey, garlic, ginger, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes.
  2. Serve garnished with fresh cilantro and lime wedges.
