Ingredients
  

Chicken Filling
  • 1 lb boneless, skinless chicken breasts cut into small pieces
  • 1 tbsp olive oil for cooking
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small corn tortillas or flour tortillas
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the chicken pieces with olive oil, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well to coat the chicken evenly.
  2. Heat a skillet over medium heat. Add the seasoned chicken and cook for about 7-10 minutes, or until the chicken is cooked through and no longer pink.
Assemble the Tacos
  1. Warm the tortillas in a dry skillet or microwave until pliable.
  2. Place a portion of the cooked chicken on each tortilla.
  3. Top with shredded lettuce, diced tomatoes, cheese, sour cream, jalapeños, and cilantro as desired.
  4. Fold the tortillas and serve immediately.
