Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter melted
Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Line a muffin tin with cupcake liners and press the crust mixture into the bottom of each liner.
  3. Chill in the refrigerator for 30 minutes to set.
Make the Filling
  1. In a clean mixing bowl, beat the softened cream cheese until smooth.
  2. Add sugar, vanilla extract, and lemon juice. Mix until well combined.
  3. Gently fold in the whipped heavy cream until fully incorporated.
Assemble the Cheesecake Cups
  1. Spoon the cheesecake filling over the chilled crusts in the muffin tin.
  2. Smooth the tops with a spatula and refrigerate for at least 1 hour to set.
Serve
  1. Remove the cheesecake cups from the muffin tin and serve chilled.
