Ingredients
  

Pastry Crust
  • 1 sheet Puff Pastry thawed
Filling
  • 4 large Eggs
  • 1 cup Shredded Cheese cheddar or your choice
  • 1 cup Spinach fresh, chopped
  • 1/2 cup Bell Pepper diced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Method
 

Prepare the Pastry
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut into squares to fit your tart pans.
Make the Filling
  1. In a mixing bowl, whisk together the eggs, salt, and pepper. Stir in the cheese, spinach, and bell pepper until well combined.
Assemble and Bake
  1. Place the pastry squares into the tart pans and fill each with the egg mixture. Bake in the preheated oven for 20-25 minutes, or until the egg is set and the pastry is golden brown.
