Method
Prepare the Crust
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of the baking pan to form an even layer.
- Bake the crust in the preheated oven for 10 minutes. Remove and let cool slightly.
Make the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
- Add sugar and vanilla extract, and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Gently fold in the blueberries.
Bake the Bars
- Pour the filling over the cooled crust and spread evenly.
- Bake in the oven for 30 minutes, or until the center is set and slightly jiggles.
- Remove from the oven and let cool completely before cutting into bars.
