Ingredients
  

Pie Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water more if needed
Filling
  • 4 cups fresh blackberries washed and drained
  • 1 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch for thickening
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and butter. Mix until crumbly.
  2. Gradually add ice water, mixing until the dough holds together. Form into a disk and refrigerate for 30 minutes.
Make the Filling
  1. In a large bowl, combine blackberries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat.
Assemble the Pie
  1. Preheat the oven to 375°F (190°C). Roll out the pie crust on a floured surface to fit the pie dish.
  2. Place the rolled crust in the pie dish and fill with the blackberry mixture.
  3. Roll out the second crust and place it over the filling. Seal and cut slits for steam.
Bake the Pie
  1. Bake in the preheated oven for 45 minutes or until the crust is golden brown and the filling is bubbly.
  2. Let cool before serving to allow the filling to set.
