Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup fresh blackberries halved

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, oats, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the halved blackberries.
Baking
  1. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use fresh blackberries. You can substitute with frozen blackberries, but do not thaw them before adding to the dough.
