Ingredients
  

Beans
  • 2 cups black beans cooked or canned
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
Spices
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 1 cup vegetable broth
Garnish
  • 2 tablespoons cilantro chopped
  • 1 lime juiced

Method
 

Cooking the Beans
  1. In a saucepan, heat a little oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the cumin, smoked paprika, salt, and black pepper, and cook for an additional minute.
  4. Add the cooked black beans and vegetable broth to the saucepan. Bring to a simmer and cook for about 20 minutes, allowing the flavors to meld.
  5. Remove from heat and stir in lime juice and chopped cilantro before serving.
