Ingredients
  

Chicken
  • 1 whole whole chicken about 4-5 lbs
Beer
  • 1 can lager or ale your choice of beer
Spices
  • 2 tablespoons olive oil for coating
  • 1 tablespoon paprika smoked or sweet
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon cayenne pepper optional for heat

Method
 

Preparation
  1. Preheat the grill to medium heat (about 350°F).
  2. In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create a spice rub.
  3. Pat the chicken dry with paper towels and rub the spice mixture all over the chicken, including under the skin.
  4. Open the can of beer and take a few sips to make it easier to fit in the chicken. Place the beer can inside the chicken's cavity.
Grilling
  1. Carefully place the chicken upright on the grill, using a beer can holder if available.
  2. Close the grill lid and cook for about 1 hour, or until the internal temperature reaches 165°F (75°C).
  3. Rotate the chicken occasionally for even cooking.
  4. Once cooked, carefully remove the chicken from the grill and let it rest for 10 minutes before serving.
