Preparation
- Preheat the grill to medium heat (about 350°F).
- In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create a spice rub.
- Pat the chicken dry with paper towels and rub the spice mixture all over the chicken, including under the skin.
- Open the can of beer and take a few sips to make it easier to fit in the chicken. Place the beer can inside the chicken's cavity.
Grilling
- Carefully place the chicken upright on the grill, using a beer can holder if available.
- Close the grill lid and cook for about 1 hour, or until the internal temperature reaches 165°F (75°C).
- Rotate the chicken occasionally for even cooking.
- Once cooked, carefully remove the chicken from the grill and let it rest for 10 minutes before serving.
